Wine making: During the vinification, the wine is protected from the oxygen action
Preservation: The wine is preserved into steel tanks, in which is possible to control the temperature

Fermentation: The second fermentation takes place in a pressure tank (Charmat method). The gas (carbon dioxide) which is originated during this stage give to the Prosecco wine its effervescence
